Almond Butter Cups

Happy Tuesday!!  Welcome to summer!  The kids are out of school (wish my full-time job took a summer break), pool is open, beach trip planned, summer to do list is written, and summer recipes are coming!!

I love the sunshine (even though it has been raining FOREVER here).  I am just not a fun of the heat or humidity.

Since the kids out of school, I wanted to make a little summer kick off treat!  I am trying to incorporate Paleo as much a possible in the rest of my family’s diet so I started with these treats.

These are so easy to make but they go fast!!


Almond Butter Cups

Servings 24 Cups


  • 1 Cup Almond Butter
  • 1/2 tsp Salt
  • 1 tsp Vanilla
  • 1 TBSP Coconut Flour
  • 1 TBSP Honey
  • 1 Bag Enjoy Life Mini Semi Sweet Chocolate Chips


  1. Mix Almond butter (I use THIS one), Salt, Vanilla, Coconut Flour, and Honey in a small bowl.  I used a spoon and just kept stirring until everything was mixed. 
  2. Pour about half of the chocolate chips in a microwave safe bowl.  Heat at 50% power for 1 min.  Stir and heat an additional 30 seconds on 50% power.  Stir.  When you run out of chocolate repeat this step to melt the remaining chocolate.  Don't melt all of the chocolate at once or it will set before you finish.
  3. Spoon about 1/2 TBSP of melted chocolate into a paper lined mini muffin tin.  You could also omit the paper liners but then you don't get the ridged edges like traditional butter cups.  Now scoop up about 1/2 Tbsp almond butter mixture and roll into a ball.  Press into the melted chocolate making chocolate squeeze up between the paper liner and almond butter ball.  Now top with about 1 tsp melted chocolate.  Repeat until all ingredients have been used.
