Avocado Salad/Relish/Salsa

Good Morning, readers!!  I hope your weekend is off to a good start!  My kids left early this morning for day 2 of the SHINE girls conference at our church.  So it’s just me and the blog this morning.

I love avocados!!  They are fresh and creamy and add such a fun flavor to your food!  So when a friend recommended this recipe I had to try it!!  Thank you, Melissa Hand, Realtor

This turned out absolutely delicious and I just kept thinking of all the things I could put it on or serve it with.  It is great as a side, but I was thinking on a burger, taco, taco salad, “nachos”, and such much more!!

Several observations about this recipe:

  1. Yes, you can make it ahead because of the lemon juice the avocado won’t turn black.
  2. It is just as tasty left over.
  3. The longer it sits the more liquid it renders.
  4. You must cut the cucumbers on the smaller side or they overpower the salad.
  5. You can add some cumin and replace the lemon juice with lime juice to salsa it up.

Avocado Salad/Relish/Salsa


  • 1 Cucumber, Diced I used a long skinny one
  • 4 Plum Tomatoes, Diced
  • 3 Ripe Avocados, Diced
  • 1/2 Onion, Diced Use a Red Onion for Salad & Relish, Use a Sweet Onion, Like a Vidalia, for the Salsa
  • 1/4 cup Fresh Chopped Cilantro
  • 1 Lemon, Juiced
  • 2 TBSP Extra Virgin Olive Oil
  • Salt & Pepper to Taste


  1. Dice Cucumber, Tomatoes, Onion and place in a medium sized bowl. 

  2. Cut avocados in half and remove the seed.  Scoop the avocado out with a spoon then dice.  Add to the bowl.

  3. Rough chop the cilantro and add to the bowl. 

  4. Add Lemon Juice, Olive Oil, Salt and Pepper and stir to combine.  Enjoy!
