Broccoli Slaw

Happy Friday!!

We recently had a family dinner with extended family to celebrate a birthday!  Since 3 of us are doing Whole30 we decided to do hamburgers on the grill.  This way the Whole30 folks could just toss the bun.  I made homemade compliant mayo and this yummy broccoli slaw.

Before I get to the recipe can I just tell you I am not sure how I feel about the upcoming weekend.  I know I tell you all the time how busy things in my life stay!!  Well, this weekend all 3 kids will be participating in the teen girls conference, SHINE,  at our church, Hunter Street Baptist Church.  I know they will have so much fun, learn, be encouraged and spend time in the word!!  I can’t wait to hear all about it.  However, my house will be/feel so empty with all of them gone.

I guess it will be a glimpse of what the future hold for my husband and I.  I think we will have a date night!  Maybe dinner and a movie!  I will let you know what movie we see!!  Stay tuned!!

Now about this broccoli slaw!!  It is perfect for a refreshing side with burgers, wings, ribs…etc.  When I think of slaw I think summer and cooking out on the grill.  I must admit I am ready for some sunshine but I live in Alabama so it comes with 100 degree temps most summers.  (Not ready to melt)

Broccoli Slaw

  • 2 bags broccoli slaw mix
  • 1 Cup Mayo
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Dill
  • 1/2 tsp Black Pepper
  • 1/2 Lemon, Juiced
  • 1 Tbsp Apple Cider Vinegar
  • 3 Green Onions, sliced (I only used the green end)

  1. In a small bowl add Homemade Mayo, Garlic Powder, Dill, Lemon Juice, Black Pepper, and Apple Cider Vinegar and whisk until smooth.  Set Aside.

  2. Dump bags of broccoli slaw in a large mixing bowl.  Slice green end of green onions and add to bowl.  Stir to combine.

  3. Pour mayo mixture over broccoli slaw and stir until completely combined.  Store in an air tight container in the fridge.
