Everything but the Kitchen Sink Breakfast Casserole

Whew, that was a long title!!  Kind of like my “to do” lists these days!  I just wish the days were longer to match.  I love this time of year.  Fall is the starts off my favorite time of year.  I love the changing leaves, cooler weather, chili, homemade soups, apple cider, the smell of fires in fireplaces, sweaters, scarves and boots!!  Too bad I live in Alabama and Fall decided to quit showing up for the party!  I remember when my twins were 2 and we would dress them in tights and little Alabama (ROLL TIDE) cheerleader outfits on game day.  They would run through the leaves and we would bring blankets to the games.  Now, we pass out of heat exhaustion all the way through Thanksgiving.  As a matter of fact we had to wear short sleeves (some family members even had on shorts) Christmas Day last year.  This is just wrong.  I miss Fall!!!

Something I am not a big fan of is breakfast.  Well, let me clarify.  I love breakfast food, I just don’t like the breakfast hour!!  I am not a morning person, I am a night owl.  So getting up and eating breakfast can be a challenge for me!  However, this breakfast casserole made me want to get up.  It has a medley of ingredients and is topped with my new favor spice blend.  I am in the middle of a Whole30 so spices are key!!  They just kick recipes up a notch.

I have been seeing posts on Facebook and Instagram about this Trader Joe’s spice blend that is a game changer.  So I grabbed one of my daughters last Saturday and off we went to find this gem.  Apparently, Everything but the Bagel was about to change my life.  So I bought 2.  Admittedly, I am one of those people that when I find something new at the store I want to try it as soon as I get home.  So, like any other impatient person,  I sprinkled some in my hand and tasted it.  I couldn’t believe it…it was everything but the bagel and it was delicious.  So I was determined to use it immediately.

This is my favorite breakfast casserole of all times!!  It is loaded with all kinds of goodness and topped with my new favorite spice blend.  It is super easy to make and reheats deliciously!!


Everything But The Kitchen Sink Breakfast Casserole

  • 1/2 Onion, diced
  • 1 baby Sweet Red bell pepper, diced
  • 1 baby Sweet Orange bell pepper, diced
  • 1 cup Diced Mushrooms
  • 2 Tbps Ghee
  • 2 links Sausage, diced I used Aidell's Chicken Apple
  • 1/2 Sweet Potato, Peeled and shredded
  • 1 handful Baby Spinach
  • 8 Eggs
  • Salt & Pepper
  • Everything But the Bagel Spice Blend


  1. Melt Ghee in skillet on Medium heat.  Add onions and peppers and cook for 2 minutes.  Sprinkle onion & pepper mixture lightly with salt.  Add the mushrooms and cook for 2 minutes. 
  2. Once onion, peppers and mushrooms are soft add in the sausage.  Cook until heated through.  Now stir in the shredded sweet potatoes and cook for 5 minutes stirring occasionally.
  3. Toss in a handful of baby spinach and stir to combine.  Cook until spinach is just beginning to wilt. 
  4. Poor veggie mixture into a greased pie plate and spread even across the bottom of the dish. 
  5. Whisk the eggs, salt and pepper together until combined.  Poor eggs over veggie mixture.  Sprinkle with Everything but the Bagel evenly across the top of the casserole.
  6. Bake at 350 degrees for 25-30 minutes or until eggs are set and toothpick comes out clean.
