Homemade Paleo Chocolate Chip Cookies

Happy Friday!!! I hope you have had a great week!!  Mine has been super busy and the weekend is promising the same.  I did manage to do some cooking this week and I can’t wait to share!!  Lots of posts coming your way…even a reader requested post!!

First up….COOKIES!!! (Yes, please)

Before I started my Whole30 and Paleo adventure I was all over the place with food. I love to cook and would make anything regardless of how healthy or unhealthy it really was.  I even catered my twin’s sweet 16 birthday party myself.

Nothing in that picture is healthy. Well maybe the plain strawberries.  (of course who would choose the plain strawberries when there are chocolate covered strawberries).  I love to entertain so it has been challenging retraining my cooking habits.  Instead of reaching for the cream cheese, cheese, gluten filled, processed, and sugar laden ingredients; I now reach for healthier options.  (Yep, even when it comes to cookies)

Last night I went to a women’s table group (fantastic job by Hunter Street Baptist Church’s Women’s ministry for coming up with this fabulous way for women of all ages and stages in life to connect with one another) and we were asked to bring a snack or a sweet. I decided to bring both and make them healthy.  So I took my Veggie Dip with carrots and broccoli, and Homemade Paleo chocolate chip cookies.  They both were a hit.  I love when someone can’t believe how good healthy can taste!!  I also love that these cookies are dairy free, gluten free, soy free, and egg free.  They are so easy to make and so delicious that they disappear about as quickly as you can make them.

Remember, these cookies are NOT Whole30…they are Paleo. Now go make some!!!

Paleo Chocolate Chip Cookies

Gluten Free, Dairy Free, Soy Free, and Egg Free
Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes
Servings 14 cookies

Ingredients

  • 1 3/4 cups Almond Flour (Blanched)
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 cup honey
  • 1/4 cup Palm Shortening, melted
  • 1 tsp vanilla extract
  • 3/4 cup Enjoy Life Chocolate Chips

Instructions

  1. Preheat Oven to 350 degrees

    1. In a medium bowl add Almond Flour, salt and baking soda.  Stir with a whisk to mix.

    2. Melt palm shortening in microwave safe measuring cup for 20 seconds stir and add to dry ingredients. 

    3. Add honey and vanilla extract to dry ingredients and stir until combined. 

    4.  Stir in chocolate chips.

    5.  Using a medium sized scoop, scoop dough onto parchment paper lined or silicone liner cookie sheet.  Place cookies 2 inches apart and lightly press cookies down to flatten the top.

    6. Bake for 6-8 minutes until lightly browned.  Cool in pan on wire rack for 5-10 minutes.  Enjoy!
