Paleo Banana Nut Bread

Good Morning!! I hope you all had a great weekend!!  I sure did!

One of my beautiful daughters performed in our local All-County Honor Band on Saturday. They did fantastic!!  They had only 1 full day of rehearsing the music before the performance and sounded like they had worked on it for months.  It was amazing!  Another one of my daughters competed in a winter guard competition and her team got 1st place!  Woo Hoo!! I am one proud mom! Too bad their performances were in 2 different states!!  This was one of those weekends I wish I could have been in 2 places at once.   I did get to watch a video recording of the winter guard performance and it was outstanding!  I can’t wait to watch it live in 2 weeks at the next performance.

We also had family in town since it was a long weekend with no school Monday. We went out to eat at a local Mexican restaurant.  However, I stayed true to my food freedom and didn’t eat at the restaurant. I ate my dinner before we left for the restaurant.  Since my eating habits usually spur an assortment of questions, I decided to let my extended family have a sample.  So I whipped up a batch of this banana bread and had to fight the kids out of the container on the way to my parent’s house.  It was a hit!!

Remember this is NOT Whole30.    Just for fun I used THIS silicone mini loaf pan to make baby loaves.  They are cute and delicious!

Paleo Banana Bread

Ingredients

  • 3 cups Paleo Baking Mix
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder (Gluten Free)
  • 1/4 tsp salt
  • 2/3 cups Palm Shortening, Melted
  • 2/3 cups Honey
  • 1/3 cup almond milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 large bananas, mashed
  • 1/3 cups Walnuts, chopped

Instructions

  1. Preheat oven to 325 degrees.

    In a large mixing bowl add Paleo Baking mix, Baking Soda, Baking powder and salt.  Stir together with a whisk.  Now add melted palm shortening, honey (tip: when measuring honey, grease measuring cup with a little olive oil, helps the honey slide right out of the measuring cup), almond milk, eggs and vanilla extract.  Use a spoon/spatula to stir until combined.  In a small bowl mash the bananas.  Add bananas and walnuts to mixture and stir.   

    Pour batter into greased loaf pan and bake for 30-40 minutes or until a toothpick comes out clean. (Oven temps vary so keep an eye on it after 30 minutes).

    *If using silicone mini loaf pan, fill cavities almost full and bake for 15-20 minutes or until toothpick comes out clean.
