Peppermint Mocha Latte

Hello Readers!! I hope you are having a great week!!  This is a “paleoish” item.  (the peppermint extract makes it paleoish).

I am a coffee snob (as I said in my Whole30 Coffee Creamer post).  I like fancy coffee.  Peppermint and chocolate together is one of my favorites.  This is creamy, warm and minty goodness!!!  It is very easy to make and you can even add some collagen to it.  I use THIS collagen.

Peppermint Mocha Latte

Creamy, sweet, minty goodness!!

Ingredients

  • 1 Cup Unsweetened Almond Milk Creamer (I used Califia)
  • 2 Tbsp Cocoa Powder
  • 1/2 tsp Peppermint Extract
  • 3 tsp Maple Syrup (more or less to taste)
  • 1/2 cup Brewed Coffee
  • Whipped Coconut Cream For Topping
  • Enjoy Life Mini Chocolate Chips For Topping

Instructions

  1. Put all ingredients (except Whipped Coconut Cream and chocolate chips) in a blender (I used my Ninja Single Serve Smoothie Cup) and mix until combined and frothy.  Poor in a mug, top with Whipped Coconut Cream and chocolate chips!  ENJOY!
