Sausage Egg Cups

Sausage!!!!  Can I tell you how much I love sausage?  Well, I am going to anyway.  I love that you can make it sweet, mild, hot, savory…I mean how versatile?

When I think of sausage I think breakfast and pizza.  So of course I had to make sausage breakfast cups.  This is another easy recipe that can be made ahead.  Heat and eat!!  Right now that is so important.  Myself and two of my children are doing a whole30, so easy and tasty is super important!

I am not sure what is harder though…dealing with my own phases of whole30 or dealing with my kids phases of whole30.  To be honest it is much harder to cook for 3 doing Whole30 and 2 that aren’t!  When I was the only one doing Whole30, I could eat scrambled eggs for dinner or leftover veggie soup for lunch and dinner.  I don’t mind leftovers.  However, trying to keep 2 teenagers happy while doing a Whole30 is a whole other level of difficult.

That is why I love these Sausage Egg Cups!!  It means one meal this week is done.  Check it off the list!!

Sausage Egg Cups

Servings 12 Cups

Ingredients

For the Sausage:

  • 1 pound Ground Pork
  • 1 TBSP Italian Seasoning
  • 1 tsp Sweet Paprika
  • 1/8 tsp Cayenne Pepper (optional)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder

For the Egg Mixture

  • 12 Eggs
  • 1/2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/8 Cup Nutritional Yeast

Instructions

For the Sausage:

  1. Add all sausage spices to a bowl and stir with a fork to combine.  Set aside.
  2. In a skillet over medium to medium high heat place the ground pork and break apart with wood spoon or THIS
  3. Sprinkle seasoning mix over the pork and continue to mix into pork as it browns.  Brown until no longer pink.  Drain and set aside.

For the Egg Mixture:

  1. Place all ingredients in a bowl with a spout like THIS and whisk until combined.

Assembly:

  1. Place about 1 & 1/2 TBSP sausage into each of 12 muffin cups.  I prefer using silicone so nothing sticks.
  2. Bake at 350 degrees for 22 - 25 minutes or until eggs are set.
  3. Pour egg mixture evenly in all 12 cups (you will almost fill the cups)
