Whole30 Coffee Creamer (Dairy Free)

Happy Friday!!  We went on a family vacation so I have been silent here on the blog!!  (I will posting about the trip next week)  As for today, I am back at it and have a treat for you!!!

WHOLE30 friend that miss their creamy delicious coffee….I have a treasure for you!!  This coffee creamer is thick, smooth and slightly sweet.

I personally am a coffee snob!!  Yep, I admit it!!  (I may also be a chocolate snob…maybe).  Before my first Whole30 I loved to order the Peppermint Mocha Latte.  Then I started Whole30 and realized the amount of sugar in those things!!  YIKES!!!

Once your Whole30 is complete and you move on to your Food Freedom…you could add a little Vanilla Extract for flavored creamer!!

To be honest I am not a fan of coconut.    Ok are you done yelling at me and throwing things??  Yes? OK!  I actually like this creamer.  Don’t you feel bad for yelling at me now?  No? whatever!

Whole30 Coffee Creamer

Ingredients

  • 1 can Full Fat Coconut Milk
  • 1 Pitted Date (soaked in water)

Instructions

  1. Place date in a small cup of water so that the date is completely covered with water.  Soak for 15-30 minutes.
  2. Pour can of coconut milk in blender.  I used my Ninja single serve cup.
  3. Remove date from water and add to blender.  Blend until completely smooth.  Store in an airtight container in the fridge for up to 7 days.
